The sturgeon lives a long time and spawns only at age 16-17. The next time it is able to spawn in 5 years. This fact influences the fact that the caviar of this fish is a rare and expensive product. Up to 300 kg of this valuable caviar are harvested per year. Sturgeon among fish is the champion in terms of sodium content. Its complete protein containing all amino acids is easily assimilated by the body (by 98%). It has phosphorus and potassium in large quantities, as well as magnesium, calcium, iron, sodium, chlorine, fluorine, chromium, molybdenum, nickel and iodine.
